Rye Flour, Explained

Rye flour comes in three common grinds: light rye (bran and germ removed, ~8-9.5% protein), medium rye (most of the grain, 9-10.5% protein), and dark rye — also sold as pumpernickel flour — with the most bran and about 8-9% protein. The protein number misleads: rye proteins don't form gluten. Structure comes from pentosans, which absorb many times their weight in water — which is why rye doughs run 80-110% hydration and handle like paste, not like wheat dough.

The three rye flours — one chart

Light rye (also called white rye): bran and germ completely removed, leaving the starchy endosperm. Protein 8-9.5%, ash around 0.75%, absorption about 1.03× bread flour, comfortable at 68-80% hydration. The mildest flavor of the three.

Medium rye: most of the rye grain with moderate bran. Protein 9-10.5%, ash around 1.5%, absorption about 1.08× bread flour, with formulas typically running 80-95% hydration. This is the workhorse — when a recipe says just 'rye flour,' medium rye is usually the safe reading.

Dark rye (sold as pumpernickel flour): the coarsest grind with the most bran and the deepest flavor. Protein 8-9%, ash 2.0% and up — the high mineral content of heavy bran inclusion — absorption about 1.10× bread flour, and traditional formulas run 90-110% hydration. Used in German pumpernickel and dense Scandinavian ryes.

Rye protein is not gluten — why the number misleads

Wheat flour at 9-10% protein makes a soft, extensible dough because its glutenin and gliadin form gluten. Rye sits in the same protein range on paper — 8-10.5% — but its proteins do not form a gluten network. Rye structure comes from pentosans: soluble fibers that absorb roughly 8-10 times their weight in water and set into a gel.

The practical consequences: rye dough is sticky and paste-like rather than stretchy; it cannot be kneaded to a windowpane and doesn't benefit from trying; and it drinks far more water than its protein number suggests. This is also why comparing rye to wheat by protein percentage tells you almost nothing about how it bakes — the ash number (bran content) predicts rye behavior better than protein does.

Dark vs medium vs light — which to use

Choose by how much rye character the bread should have, and how much structure it needs to keep. A 10-20% rye addition to a wheat loaf — the pain de campagne pattern — works with any grind; medium rye is the standard pick and adds noticeable depth without wrecking the crumb. At 40% rye, Hamelman's hearth formula pairs 40% medium rye with 55% bread flour at around 78% hydration (range 75-82%): enough wheat gluten remains to hold a hearth shape. At 100% rye there is no gluten to preserve — Hamelman's 100% rye pan loaf runs medium rye at about 85% hydration (range 80-95%), baked in a pan because the pentosan gel, not gluten, is doing all the structural work.

Dark rye belongs where its bran and depth are the point: German-style pumpernickel — traditionally 100% dark rye given a very long, low steam bake — and Scandinavian ryes. Light rye is for the opposite goal: a hint of rye complexity in an otherwise light loaf, common in American deli-style rye.

Hydration when you bake with rye

The absorption multipliers from the flour specifications: light rye about 1.03× bread flour, medium rye 1.08×, dark rye 1.10×. In practice, a formula's stated hydration assumes its stated flour mix — swap medium rye in for bread flour and the same water behaves like several points less.

Worked example: a 75% hydration country loaf converted from 100% bread flour to a 60/40 bread-flour/medium-rye mix. The rye fraction wants about 8% more water, so to keep the same feel you'd push total hydration toward 78% — exactly where Hamelman's 40% rye formula sits.
