    Start here. Baker's percentage is by weight, so every number on this site assumes grams — never cups. A 0.1 g scale is the difference between a loaf you can repeat and a loaf you got lucky with.

  2. 2. High-protein bread flour (12–14%)

    The dough the math is written for. All-purpose can't hold the hydration you'll calculate; real bread flour absorbs it and builds the gluten that traps the gas. Skip this and the prettiest formula still bakes flat.

    Mixes shaggy, high-hydration dough in seconds without gluing itself to your hands. The cheapest possible upgrade to the worst two minutes of day one.

  4. 4. Straight-sided fermentation container (4–6 qt)

    Bulk-ferment in something clear with straight sides and you can actually see the rise — the only reliable readiness signal there is, more trustworthy than any clock or timer.

    Holds shape and wicks moisture during the final proof, so a slack 75% dough proofs up instead of spreading into a frisbee. Get the cloth liner with it — it saves the first few loaves from sticking.

    One clean, confident slash decides where the loaf opens. Score with a real lame and you get an ear; score with a butter knife and you get a crater.

    The upgrade that matters most. It traps the dough's own steam for the first bake phase — the entire reason a home loaf can rival a steam-injected bakery oven. A combo cooker (shallow side down) is far easier to load a wet dough into than a deep pot.
