Protein content varies from about 8% (light rye) to 80% (vital wheat gluten, an additive rather than a standalone flour). For sourdough specifically: bread flour runs 12-13.5% protein, all-purpose 10.5-11.7%, whole wheat 13-14%, and Italian Tipo 00 11-12.5% for pizza-grade or 13-13.5% for bread-grade Caputo blends. Protein percentage is a starting signal, not the whole story — ash content (bran/mineral load) and how the protein behaves once hydrated (gluten-forming wheat protein vs. non-gluten rye and gluten-diluted vital wheat gluten) both change how a flour actually bakes.

All-purpose flour: 10.5-11.7% — about 2 points below bread flour, producing a softer, less oven-spring-y crumb. Italian Tipo 00: 11-12.5% for pizza-grade (Caputo Pizzeria) or 13-13.5% for bread-grade (Caputo Cuoco) — the range varies by intended use more than by 'type,' which is a fineness-of-grind classification, not a protein spec. High-extraction (T85-equivalent): 12-13.5%, matching bread flour but with more bran retained.

Whole-grain flours. Whole wheat: 13-14% — the highest protein of the common wheat flours by weight, though bran fragments cut gluten strands and reduce the FUNCTIONAL structure that protein number implies. White whole wheat: 12.5-13.5%, milled from hard white wheat rather than red, same whole-kernel nutrition with a milder flavor.

Rye flours (structure does NOT come from protein — see next section). Light rye: 8-9.5%. Medium rye: 9-10.5%. Dark rye (pumpernickel flour): 8-9%. All three sit in wheat-comparable protein ranges yet behave nothing like wheat once mixed.

Ancient grains. Einkorn: 15-17% — the highest protein of any standalone flour in this chart, paired with the WEAKEST gluten structure of the group (see below). Emmer (farro): 13-15%. Khorasan (Kamut): 13.5-15%. Spelt: 11-13%, with gluten that is more soluble and fragile than modern wheat despite the comparable protein number.

Other. Durum semolina: 12.5-14%. First clear flour: 15-16.5% — the high-protein fraction left over after patent flour is milled out, prized for rye-bread crusts and bagels. Vital wheat gluten: 75-80% protein — this is not a flour on its own but a concentrated gluten additive, blended in at 1-3% of total flour weight to reinforce low-protein or whole-grain doughs.

What protein percentage actually predicts — and what it doesn't

For refined wheat flours (bread flour, all-purpose, Tipo 00, high-extraction), protein percentage is a genuinely useful predictor: higher protein means more gluten-forming potential, more structure, more oven spring, and generally more water absorption. That's why bread flour (12-13.5%) out-performs all-purpose (10.5-11.7%) for open-crumb hearth loaves — there's real gluten-forming capacity behind the number.

That relationship breaks down for two flour classes on this chart. Rye protein (8-10.5% across the three grinds) does not form gluten at all — rye structure comes from pentosans, fibers that absorb 8-10 times their weight in water and set into a gel. And einkorn's unusually high 15-17% protein pairs with gluten so weak and unstable that recipes skip autolyse entirely (extended hydration time breaks einkorn's gluten down rather than strengthening it). In both cases, reading the protein number as 'this flour will be strong and structured' gives the wrong answer.

Ash content — the mineral residue left after burning a flour sample, a proxy for how much bran and germ survived milling — predicts baking behavior at least as well as protein for whole-grain and rye flours. Bread flour's ash is 0.5%; dark rye's is 2.0%, four times higher, despite dark rye's protein number being LOWER than bread flour's.

High protein vs low protein — which to choose

Choose higher protein (13%+: whole wheat, einkorn, emmer, khorasan, first clear) when the goal is nutritional depth, a hearty crumb, or you're deliberately building a whole-grain-forward loaf and accepting the denser structure that comes with it. Choose lower protein (all-purpose 10.5-11.7%, Tipo 00 pizza-grade 11-12.5%, spelt 11-13%) for a softer crumb, a more tender bite, or delicate preparations like enriched doughs and thin-crust pizza where excess gluten development works against the texture you want. 'High protein bread flour' isn't a single product — standard bread flour already runs 12-13.5%, at the top of the common refined-wheat range; the flours on this chart that genuinely exceed it (whole wheat 13-14%, first clear 15-16.5%, einkorn 15-17%) all carry the tradeoffs covered above rather than being straightforward upgrades.

Protein, absorption, and hydration — the practical link

Every flour on this chart also has a measured absorption multiplier — how much more or less water it drinks relative to bread flour's 1.0× baseline. Higher-protein wheat flours generally absorb more: whole wheat (13-14% protein) sits at 1.075×, meaning a 75% hydration bread-flour formula becomes roughly 80% when whole wheat replaces it. But absorption tracks bran content and pentosan behavior more precisely than it tracks protein — dark rye (only 8-9% protein) absorbs at 1.10×, the highest multiplier of any standalone flour, because its structure comes from bran and pentosans rather than gluten.

The practical takeaway: use this chart's protein numbers to predict STRUCTURE and STRENGTH (will this flour hold an open crumb, does it need extra care in shaping), and use each flour's absorption multiplier — not its protein percentage — to predict how much water to add.
